Dried Mushrooms

Dried mushrooms are mushrooms that have had their moisture removed through a drying process. They fall roughly into two categories: Asian mushrooms like shiitake, wood ear, cloud ear, and matsutake, and European/American mushrooms like porcini, morel, trumpet, and chanterelle. Their quality, flavor, and amount of grit can vary considerably. They have been used for culinary, medicinal, and spiritual purposes in different cultures for centuries. Dried mushrooms provide an excellent way to preserve and intensify the flavor of this versatile ingredient. Whether you're a gourmet cook or just looking to spice up everyday meals, having a variety of dried mushrooms in your pantry can take your dishes to new heights.

How to Make Dried Mushrooms

  • Choose fresh mushrooms: Start with fresh, clean mushrooms.
  • Clean mushrooms well: Use a soft brush or soft cloth to gently brush off any dirt or debris. Do not let them soak in water.
  • Choose a drying method:
    • Air Drying: This method works best in dry, warm climates. String the mushroom pieces together with thread or fishing line and hang them in a warm, ventilated area out of direct sunlight. This may take several days.
    • Oven Drying: Preheat the oven to its lowest setting, usually between 140°F and 170°F (60°C and 77°C). Spread mushroom slices in a single layer on a baking sheet. Keep the oven door slightly ajar to allow moisture to escape. This may take 4 to 10 hours, depending on the thickness of the slices and the exact temperature. Check regularly to make sure they don't burn.
    • Food Dehydrator: If you have a food dehydrator, spread mushrooms in a single layer on a tray. Follow the manufacturer's instructions for drying vegetables or herbs. Typically, this can take 4-8 hours.
  • Check for dryness: They should not contain any moisture as this can lead to mold growth.
  • Storage: Store dried mushrooms in an airtight container in a cool, dark place. This will help retain their flavor and prevent any possible rehydration.
