How to Make Mushroom Jerky?

  • Choosing mushrooms: Shiitake, Portobello, and flat mushrooms are the best varieties for making jerky because of their meaty texture.
  • Clean and slice: Gently clean the mushrooms with a damp cloth. Slice them into thin, even strips, making sure they are not too thin or they may become too crispy.
  • Marinade: Make a marinade using ingredients such as soy sauce, garlic, ginger, liquid smoke, maple syrup or agave, and any spices you like. Dip the sliced mushrooms into the marinade and let soak for a few hours or overnight to absorb the flavors.
  • Dehydrate or Bake: If you have a food dehydrator, place the marinated mushrooms in a single layer and follow the manufacturer's instructions for making jerky. If using an oven, set it to the lowest possible temperature (usually about 170°F or 75°C), spread the mushrooms out on a baking sheet, and bake for 3-4 hours or until the desired texture is achieved. Make sure to turn them occasionally for even drying.
  • Cool and store: Allow the dried mushrooms to cool completely. Store in an airtight container in a cool, dry place. They should keep for a few weeks, but be sure to check for signs of spoilage before serving.
