Description	Pink Oyster (Pleurotus djamor) is a tropical strain that produces beautiful clusters of light pink to deep pinkish-red caps that are a favorite at farmers' markets. They are succulent and savory, and have a denser texture than other oyster varieties. They are great for beginners because they colonize quickly and are reliable producers in warmer temperatures. When cultivated outdoors, they are not cold tolerant and fruit prolifically throughout summer. Note that the shelf life of pink oysters is shorter than other oyster varieties. As a tropical strain, they also thrive with higher humidity.
