Shiitake is an edible and medicinal wood-dwelling fungus. Native to East Asia, shiitake is one of the most widely cultivated fungi in the world. An invaluable ingredient in many Asian and vegetarian dishes, shiitake is rich in fiber, B vitamins (especially pantothenic acid), copper, selenium, manganese, and iron. This mushroom is widely used in traditional Asian medicine and contains many bioactive chemicals, such as the polysaccharide shiitake polysaccharide.
