Notes
1, The method is only for rapid detection, those samples which are unqualified should be sent to laboratory to get further confirmation by standard method.
2, The absolute ethyl alcohol should be prepared by users.
3, Shake the sample violently to ensure that the sample is extracted fully during the sample treatment.
4, The centrifugal tube can be reused after cleaning up.
Storage
Keep them at room temperature in aeration-drying condition. The period of validity is one year.
Scientific Background
Benzoyl peroxide (BPO) is a kind of strong oxidant. BPO is also used as flour brightener. It can completely and rapidly react with yellow carotene which is produced by wheat endosperm, so as to brighten the flour. Besides, it can also accelerate slaking. The reduzate benzoic acid (BA) can restrain the protease and microorganism from growing, avoid protein resolving, and improve the storage tolerance of flour products. However BPO can damage the nutrients such as β-carotene, VB, VA, VE and so on. Too much consumption of BA is not good for health. According to the national food hygienic standard (GB 2760), the maximum usage of benzoyl peroxide in wheat flour is 0.06 g/kg.
