Nitrate in food comes from nature on the one hand, such as some vegetables which often contain more nitrate; on the other hand, due to the needs of food processing, the appropriate amounts of nitrate and nitrite is added as some food colorants. Nitrate itself is not very toxic, but it can be reduced to nitrite under the action of bacteria, directly causing hypoxia in human and animal poisoning, causing methemoglobinemia, and forming a strong carcinogen, ammonium nitrate, with secondary amines in the gastrointestinal tract. Ammonium nitrate induces cancer in the digestive system. Vegetables, especially leafy vegetables, are easily enriched in nitrates, and 81.2% of the nitrates ingested by the human body come from vegetables. In recent years, due to unreasonable fertilization and other reasons, the nitrate content of leafy vegetables has exceeded the standard.
