Description
Dextran is a polysaccharide which is composed of α-1,6-linked glucose units. This polysaccharide is produced by some microorganisms such as Leuconostoc mesenteroides. When harvested sugar cane or sugar beets are damaged climatically or mechanically such microorganisms can contaminate the damaged portions by assimilating the succrose
and producing viscous dextran.
At a sugar factory, dextran-containing juice shows low filtration rate and poor crystallization of sucrose. Dextranase 3F is an endo-splitting type of dextranase and hydrolyses the dextran rapidly. Hence the application of Dextranase 3F improves the purification process of sugar by eliminating the interference of dextran in filtration and crystallization.
