Blue spirulina is primarily used in confectionery, frostings, ice cream/frozen novelties, dessert coatings/toppings, smoothies, dry beverage mixes, yoghurts, puddings/custards, and etc. Blue spirulina provide natural alternatives to replace synthetic Brilliant Blue and other synthetic colouring blends.
Advantages
Compared to blue spirulina powder, blue spirulina concentrate is more convenient to use, dissolves more quickly and can avoid dust flying.
