In natural growth environments, Leuconostoc cells are arranged in pairs or short chains; in some competitive growth environments, cells are arranged in longer chains. Hetero-lactic fermentation, which can metabolize citric acid.The new Leuconostoc genus is composed of Leuconostoc enterica and 7 other species, including L. gelidum (Leuconostoc cold), L. carnosum (Leuconostoc meat), L. fallax (Leuconostoc fraud), L. citreum (Leuconostoc citrate), L. argentinum (Leuconostoc argentina), L. pseudomesenteroides (Leuconostoc pseudoenteroides) and L. lactis (Leuconostoc lactis). Among them, Leuconostoc mesenteroides includes three subspecies: L. mesenteroides subsp. mesenteroides, L. mesenteroides subsp. dextranicum and L. mesenteroides subsp. cremoris.
