Description

FTIR structure analysis shows that wheat oligopeptides have characteristic absorption peaks at 1 290~1 330 cm~(-1) and 1 695~1 660 cm~(-1), indicating that wheat oligopeptides contain an α-helix structure Conformation, among them, the structural conformation of β-turn is dominant. The experiment selects the oxidation free radical scavenging ability method to verify the antioxidant ability of wheat oligopeptides.
