Saccharomyces cerevisiae, also called baker's yeast, is the most intensively studied eukaryotic model organisms in molecular and cell biology. Many proteins that are very important for human were first discovered by studying their homologs in yeast, such as cell cycle proteins, signaling proteins, and protein-processing enzymes. As a single-cell microorganism, S. cerevisiae are easily cultured and it has relatively short life cycle, which is a great advantage of being a model organism. All strains of S. cerevisiae can grow aerobically on glucose, maltose, and trehalose, and they use ammonia and urea as the sole nitrogen source.
S. cerevisiae has two mating types, a and α (alpha), which show primitive aspects of sex differentiation. And there are two forms of S. cerevisiae to grow: haploid and diploid. In addition, its genome is easily manipulated and can perform high-level expression, which make it serve as an excellent platform for genome engineering.
