Description

Native to the Mediterranean and domesticated in ancient times, this rare, enormous Globe artichoke variant features true hardy perennial qualities, showcasing silvery, thistle-like foliage. Tall stems bear fat thistle-like buds, resembling small globe artichokes in summer. The edible flower buds and stems, akin to large celery stalks, are often braised or steamed, offering an artichoke-like flavor and serving as a vegetarian source of enzymes for cheese production.
