Our Services

We help detect egg white lysozyme using high-performance liquid chromatography (HPLC). The method applies to milk and cheese samples.

The method requires the precipitation of casein and denatured whey proteins from milk and cheese samples first. This is followed by determining acid-soluble hen's egg white lysozyme using reversed-phase HPLC and fluorescence detection. The method can also be combined with a mass spectrometer (MS) to verify hen's egg white lysozyme.
