Vitamin C

Polyphenols

Polyphenol compounds are a class of antioxidants widely found in fruits, most commonly in apples, grapes, blueberries, and other fruits. In determining polyphenolic compounds in fruits, we most commonly use two methods.

  • Folin-phenol reagent method. A blue color compound is produced by the reaction of a forint-phenol reagent with polyphenolic compounds, which is quantitatively analyzed using spectrophotometry.
  • High-performance liquid chromatography (HPLC). HPLC has shown good application in detecting specific polyphenol chemicals in complex fruit extracts.

Carotenoids

Carotenoids are a group of fat-soluble antioxidants that inhibit the production of free radicals to reduce cellular damage caused by oxidative stress. Carotenoids, lutein, and lycopene are common carotenoids found mainly in fruits such as carrots, tomatoes, sweet potatoes, and persimmons. In carotenoid determination, we take advantage of the fact that carotenoids have light-absorbing properties at specific wavelengths. We use UV spectrophotometry to quantitatively determine their content, separate and quantitatively analyze multiple carotenoids in fruits by HPLC.
