We offer a variety of methods for determining vitamin content in fruits; the two most commonly used methods are listed below.
Polyphenol compounds are a class of antioxidants widely found in fruits, most commonly in apples, grapes, blueberries, and other fruits. In determining polyphenolic compounds in fruits, we most commonly use two methods.
Carotenoids are a group of fat-soluble antioxidants that inhibit the production of free radicals to reduce cellular damage caused by oxidative stress. Carotenoids, lutein, and lycopene are common carotenoids found mainly in fruits such as carrots, tomatoes, sweet potatoes, and persimmons. In carotenoid determination, we take advantage of the fact that carotenoids have light-absorbing properties at specific wavelengths. We use UV spectrophotometry to quantitatively determine their content, separate and quantitatively analyze multiple carotenoids in fruits by HPLC.
